The one in the non-& folder won't be the one showing up in the live area, and the one in the & folder can't be modified since it'll fail the checks.
So in other words the icon0 can't be changed from the original base game l.m.a.o. nice

SEBOOT - this is a command line utility. Well, if you do not know how to use the command line, then use the batch file.
  1. Unpack the folder "sign_eboot" from the archive: https://www.mediafire.com/?xk2m23lw5xwdrgp
  2. Just copy EBOOT.BIN in this folder and run the batch file "SIGN EBOOT.BIN.bat"
  3. DONE!
If you want to change to another Tag, open the batch file with a text editor and change the line in the "seboot -t1" - number 1 to any number you liked the Tag from 0 to 27. Signature of the latest 3 tags probably will not worked (not checked). Usually often used first 6 tags.

The real issue, imho, is that you need a "shadow" & folder for every bubble you want to create.
Is there a way to create some type of symbolic link to avoid such waste of space?

If the ePSP filesystem is emulated as FAT32 then symbolic links won't be supported there.

I tried making a TN-V bubble but gladiator begins boots back to livearea. When i tried to delete the folder,it couldn't delete it.I think the license got messed up after i tried to delete it,now gladiator begins won't boot anymore.I restored my backup :(. My megamix vitaftp got deleted as well while restoring the backup.I tried making another megamix vitaftp bubble, but it's telling me to download it from psn WTF happened :(.I spent so much time on this,i feel like giving up.This method takes way too long for each bubble anyways time to go to sleep

You need an exploit at first to install the bubble, once you have the bubble installed you can then run that bubble without running the exploit.
